Ingredients

A scoop of protein powder.
2 scoops organic vanilla whey protein powder 
A glass bottle of maple syrup.
¼ cup organic maple syrup 
A small bottle of vanilla extract.
1 teaspoon vanilla extract 
A small bowl of salt.
¼ teaspoon salt
Ground Almond Flour
1 ½ cups almond flour
Dark Chocolate
1 cup organic dark chocolate chunks 

Directions

blend: In a large mixing bowl, add Organic Valley cottage cheese and blend with an immersion blender or food processor until smooth and creamy, about 30 seconds.

Tips

  • For less clean up, use an immersion blender directly in the bowl to avoid transferring between multiple bowls.

mix: Add protein powder, maple syrup, vanilla extract, and salt to the cottage cheese. Mix until well combined and no clumps remain.
fold: Gradually fold in almond flour, mixing until a thick dough forms that holds together when pressed.

Tips

  • The dough should be firm enough to roll but not dry. Add 1-2 tablespoons more cottage cheese if needed.

fold in : Gently fold in chocolate chips until evenly distributed throughout the dough.
scoop: Using a small cookie scoop, scoop and roll dough into 36 bite-sized balls, about 1 tablespoon each. Place on a parchment-lined baking sheet.
chill: Refrigerate for at least 30 minutes before serving to firm up. Store covered in refrigerator for up to 5 days.

  • Customize flavors by swapping chocolate chips for dried blueberries, chopped nuts, lemon zest or coconut flakes.

  • Make them extra indulgent by rolling chilled bites in melted dark chocolate for a truffle-like coating.
