Ingredients
6 ounces lentil or chickpea rotini
4 cups chopped romaine lettuce
1 cup chopped radicchio
2 cups cooked rotisserie chicken, chopped
1 cup canned chickpeas, drained and rinsed
1 cup cherry tomatoes, halved
1 cup mini bell peppers, sliced
½ cup red onion, finely diced
½ cup Kalamata olives, pitted and halved
¼ cup pepperoncini, sliced
⅓ cup organic Italian vinaigrette, divided
Salt and pepper to taste
Directions
- In a large pot, cook pasta according to package directions until al dente. Drain and rinse with cold water until completely cooled.
- In a large serving bowl, combine romaine lettuce and radicchio. Add cooled pasta and toss gently.
Tips
Pat greens completely dry after washing for best texture and to prevent dressing from becoming watery.
- Add rotisserie chicken, Organic Valley® Thick Cut 3 Cheese Italian Blend, chickpeas, cherry tomatoes, bell peppers, red onion, olives, and pepperoncini to the bowl.
- Drizzle with half of the Italian vinaigrette and toss all ingredients until evenly coated. Add remaining dressing as needed.
