This vibrant Italian chopped salad packs a serious protein punch with rotisserie chicken, protein-rich pasta, and delicious Organic Valley® 3 Cheese Italian Cheese Blend. Fresh vegetables and zesty Italian vinaigrette make it the perfect make-ahead summer meal that satisfies.

Ingredients

rotini pasta
6 ounces lentil or chickpea rotini 
lettuce
4 cups chopped romaine lettuce 
radicchio
1 cup chopped radicchio 
rotisserie chicken
2 cups cooked rotisserie chicken, chopped 
chickpeas
1 cup canned chickpeas, drained and rinsed 
cherry tomato
1 cup cherry tomatoes, halved 
mini bell peppers
1 cup mini bell peppers, sliced 
Red Onion
½ cup red onion, finely diced 
Black Olives
½ cup Kalamata olives, pitted and halved 
pepperoncini
¼ cup pepperoncini, sliced 
Italian vinaigrette
⅓ cup organic Italian vinaigrette, divided 
A small bowl of salt.
Salt and pepper to taste  

Directions

cook pasta: In a large pot, cook pasta according to package directions until al dente. Drain and rinse with cold water until completely cooled.
toss: In a large serving bowl, combine romaine lettuce and radicchio. Add cooled pasta and toss gently.

Tips

  • Pat greens completely dry after washing for best texture and to prevent dressing from becoming watery.

add: Add rotisserie chicken, Organic Valley® Thick Cut 3 Cheese Italian Blend, chickpeas, cherry tomatoes, bell peppers, red onion, olives, and pepperoncini to the bowl.
dressing: Drizzle with half of the Italian vinaigrette and toss all ingredients until evenly coated. Add remaining dressing as needed.
