Ingredients
rotini pasta
6 ounces lentil or chickpea rotini 
lettuce
4 cups chopped romaine lettuce 
radicchio
1 cup chopped radicchio 
rotisserie chicken
2 cups cooked rotisserie chicken, chopped 
chickpeas
1 cup canned chickpeas, drained and rinsed 
cherry tomato
1 cup cherry tomatoes, halved 
mini bell peppers
1 cup mini bell peppers, sliced 
Red Onion
½ cup red onion, finely diced 
Black Olives
½ cup Kalamata olives, pitted and halved 
pepperoncini
¼ cup pepperoncini, sliced 
Italian vinaigrette
⅓ cup organic Italian vinaigrette, divided 
A small bowl of salt.

In a large pot, cook pasta according to package directions until al dente. Drain and rinse with cold water until completely cooled.
In a large serving bowl, combine romaine lettuce and radicchio. Add cooled pasta and toss gently.

Tips

  • Pat greens completely dry after washing for best texture and to prevent dressing from becoming watery.

Add rotisserie chicken, Organic Valley® Italian Flavor Favorites Shreds, chickpeas, cherry tomatoes, bell peppers, red onion, olives, and pepperoncini to the bowl.
Drizzle with half of the Italian vinaigrette and toss all ingredients until evenly coated. Add remaining dressing as needed.
