This cozy Oatmeal Bake is warm, nourishing and endlessly adaptable for easy mornings or make-ahead breakfasts. Rolled oats with Organic Valley® Oat Beverage, eggs, maple syrup, nut butter, vanilla and cinnamon bake into a tender, lightly sweet base. Add fruit, nuts or coconut for extra flavor and texture.

Ingredients

  • ½ cup pure maple syrup 
  • ¼ cup creamy nut butter 
  • 2 teaspoons pure vanilla extract 
  • ¼ teaspoon pure almond extract (optional) 
  • 2 cups old-fashioned rolled oats 
  • 1 ½ teaspoons baking powder 
  • 1 teaspoon ground cinnamon 
  • ½ teaspoon coarse salt 
  • ½ cup mix-in of choice (fresh or frozen berries, dark chocolate chips, sliced banana, diced apple, chopped walnuts or pecans, unsweetened dried fruit, unsweetened flaked coconut)  
  • Optional: additional pure maple syrup, for serving 

Directions

  1. Preheat oven to 375 F. Coat a 9-inch baking dish with cooking spray.
  2. In a large bowl, whisk together the Oat Beverage, eggs, maple syrup, nut butter, vanilla extract and almond extract (if using) until smooth.

    Tips

    • The batter comes together easier if the nut butter is warmed. Simply place it in a microwave-safe bowl and microwave 30 seconds or until slightly runny and easy to stir.

  3. Stir in oats, baking powder, cinnamon and salt until combined. Transfer batter to the prepared baking dish. Sprinkle mix-ins of choice on top.
  4. Bake for 35 minutes or until set. Let cool for 5-10 minutes. Slice into 6 pieces. Serve drizzled with additional maple syrup, if desired.

Yes, this recipe can be baked and cooled ahead of time, then stored in the refrigerator or freezer.

Simply place it in an airtight container; refrigerate for up to 3 days or freeze for up to 2 months. Let it thaw in the refrigerator, or warm it in the microwave until heated through.

Microwave on 50% power until heated through for best results. Or, warm it up in the oven at 300 F until heated through. Serve with a drizzle of pure maple syrup and/or a dollop of Greek yogurt for extra moisture.

Yes, you can substitute regular milk in a 1:1 ratio.

Yes, sub with flax "eggs” or egg replacer. To make a flax “egg,” mix 1 tablespoon ground flaxseed with 3 tablespoons warm water per “egg.” Let sit 15 minutes/until gelatinous. For egg replacer, follow package directions.

Fresh or frozen berries, peaches or mangoes are great as a naturally sweet topping. You can also use sliced banana, unsweetened dried fruit, chopped nuts, dark chocolate chips or unsweetened shredded or flaked coconut.
