Ingredients
1 cup natural creamy salted peanut butter, at room temperature
4 cups old-fashioned rolled oats
6 packed tablespoons brown sugar
2 teaspoons vanilla extract
2 teaspoons baking powder
1 teaspoon cinnamon
½ teaspoon salt
¾ cup raspberry or strawberry preserves
Directions
- Preheat oven to 350 F. Lightly grease a 9-by-13-inch baking dish or line it with parchment paper.
- In a large mixing bowl, combine the melted butter, peanut butter, eggs, milk, brown sugar, and vanilla extract and whisk until smooth.
- To the same bowl, add the oats, baking powder, cinnamon, and salt, and stir well to combine.
- Using a spatula, spread half of the oatmeal mixture into the prepared baking dish. Using a spoon, dollop half of the jam across the top. Using the flat side of a butter knife, gently spread the jam into swirls. Repeat this process a second time with the remaining oat mixture and jam.
