When you want a spicy, cheesy dish, these quesadilla bites are a great choice. Of course, it’s hard not to have a delicious snack when you combine Organic Valley® Shredded Mexican Blend Cheese with Organic Valley® Butter. Need a gluten-free option? Just use gluten-free tortillas as a simple substitute.

Cooking Mode

Ingredients

  • 6 6-inch flour tortillas
  • ½ cup roasted red peppers, diced
  • ¼ cup sliced green onions
  • 1 cup salsa

The "Shop Ingredients" option does not apply to all recipes.

Directions

  1. Heat oven to 425 F.
  2. Place 3 tortillas on a large foil-lined cookie sheet. Brush half of butter over tortillas; turn over.
  3. Combine cheese, red peppers and green onions; mix well. Spread mixture evenly over tortillas all the way to the edges.
  4. Place remaining 3 tortillas over cheese mixture; brush remaining butter over tortillas.
  5. Bake 5 minutes; turn quesadillas over. Continue baking 4 to 5 minutes or until golden brown and cheese is melted. Cut each quesadilla into 8 wedges; serve with salsa for dipping.
