Ingredients
A head of garlic with a clove on the side.
3 garlic cloves, roughly chopped 
A small bunch of spinach.
10 ounces baby spinach leaves 
A small bowl of salt.
¼ teaspoon salt 
black pepper
⅛ teaspoon black pepper 
A lemon with a slice on the side.
½ lemon, juiced

In a large skillet, add ghee and heat over medium heat. Once melted, add the garlic and sauté for 1 minute, stirring occasionally. Add the spinach leaves to the skillet, tossing them to coat in the melted ghee. Continue to sauté for 2-3 minutes, tossing constantly for even cooking, until the spinach is wilted and bright green.
Remove from heat and add the salt, pepper and lemon juice, tossing to coat. Serve!

Can this be made in advance?

Yes, this recipe can be made up to 2 days in advance. Store in an airtight container for up to 2 days in the fridge.

Can this be made with frozen spinach?

Fresh spinach is recommended, but frozen spinach can be used instead. However, frozen spinach should be thawed and drained before sautéing to prevent it from becoming soggy and overcooked.

How do I tell when the spinach is done?

Spinach will be wilted and bright green when ready.

What ingredients can I add to take this recipe to the next level?

Hot sauce, soy sauce and/or ginger would be delicious flavor additions to this recipe as well!
