Sheet Pan Avocado Grilled Cheese

Ingredients
Cooking Spray
½ teaspoon granulated garlic
½ teaspoon ground cumin
½ teaspoon ground coriander
1 teaspoon chopped fresh cilantro
8 slices of your favorite bread
1 beefsteak tomato, thinly sliced
1 avocado, thinly sliced
Directions
- Preheat the oven to 450 F. Line a baking sheet with aluminum foil and spray it lightly with cooking spray.
- In a small bowl, combine the granulated garlic, cumin, coriander and cilantro.
- Spread the softened butter or ghee over one side of each piece of bread. Place 4 slices of bread, buttered sides down, on the prepared baking sheet. Top each with one slice of cheese followed by the tomato slices and avocado slices. Sprinkle evenly with the spice mixture. Top each sandwich with another slice of cheese and the remaining bread, buttered sides up.
- Bake the sandwiches, rotating the pan halfway through, until they’re golden and toasted, about 5 to 10 minutes, depending on the bread you use (whole grain bread takes longer to toast than white — keep your eye on them). Remove the pan from the oven, flip the sandwiches over, then continue baking until the sandwiches are toasted on the other side, about 5 minutes longer.
