Ingredients
cucumber
2 large English cucumbers, sliced into ¼ -inch thick rounds 
Dill
2 tablespoons fresh dill, chopped 
A lemon with a slice on the side.
1 tablespoon fresh lemon juice 
black pepper
¼ teaspoon black pepper 
6 ounces smoked salmon, cut into small pieces 
Dill
Fresh dill sprigs (for garnish)

Pat cucumber slices dry with paper towels to remove excess moisture.
In a medium bowl, combine cream cheese, chopped fresh dill, lemon juice and black pepper. Mix until smooth and well incorporated.
Using a small spoon or piping bag, dollop or pipe approximately 1 teaspoon of the cream cheese mixture onto each cucumber round. Top each bite with a small piece of smoked salmon and garnish with a fresh dill sprig.

Tips

  • For extra flavor, add a thin slice of red onion or a small caper to each bite.

Can I make these appetizers ahead of time?

Yes, but assemble no more than 2 hours before serving. You can prepare the cream cheese mixture and slice cucumbers up to 24 hours in advance.

Can I substitute the smoked salmon with something else?

Absolutely! Try smoked trout, cooked shrimp or even thinly sliced radishes for a vegetarian option that adds crunch and color.

What other herbs work well in the cream cheese mixture?

Fresh chives, parsley or tarragon all pair beautifully with smoked salmon. Use the same amount as called for with dill.
