This vibrant omelet is perfect for spice lovers who want a quick and nutritious meal. It combines the creamy heat of our Spicy Cheddar with fresh vegetables for a protein-packed breakfast that brings just the right amount of kick to start your day.

Ingredients

A small bowl of salt.
Salt and pepper, to taste 
Broccoli
¼ cup broccoli florets, chopped  
Red Onion
2 tablespoons red onion, diced 
jalapeno
1 jalapeño, thinly sliced 
Chives
Optional: chives, to garnish

Directions

whisk: In a small bowl, whisk together eggs and milk until well combined. Season with salt and pepper.

Tips

  • To ensure the omelet is fluffy, whisk the eggs well until the yolks and whites are fully combined. Adding a little milk (or even water!) makes the omelet softer and fluffier.

melt ghee: In a non-stick skillet over medium heat, melt 1 ½ teaspoons ghee. Swirl to coat the entire pan, including the sides.
add veggies: In the same skillet, add broccoli and red onion, sautéing for 1-2 minutes until slightly softened. Remove from pan and set aside.
add eggs: Reduce heat to medium-low and melt the remaining 1 ½ teaspoons ghee. Pour the egg mixture into the pan and let cook undisturbed for 30 seconds.
pull eggs: With a silicone spatula, gently pull the edges of the eggs toward the center, tilting the pan to allow uncooked egg to flow to the edges.
add veggies: When eggs are about 75% set but still slightly wet on top, on one half of the omelet add the sauteed broccoli and onion, Organic Valley® Flavor Favorites Spicy Cheddar shreds and jalapeño slices over one half of the omelet.

Tips

  • Add the filling to one half of the omelet only. This helps the omelet fold easily and gives a clean, neat presentation.

fold: Using the spatula, carefully fold the other half of the omelet over the filling and cook for another 1-2 minutes.
plate: Once the cheese is melted and the omelet is fully set, use your spatula to gently lift it from the pan and slide it onto a plate.
serve: Serve immediately sprinkled with chives, as desired.

  • The key to a perfectly cooked omelet is low to medium heat. Cooking on high heat can cause the eggs to brown too quickly or become tough.

  • Use a good quality, non-stick skillet or an omelet pan to cook the eggs. An 8.5-inch pan is ideal for a three-egg omelet.

Frequently Asked Questions

While omelets are best fresh, you can either prepare all the ingredients separately in advance and cook when ready or, make the omelet the night before, refrigerate, then reheat in the microwave for 20-30 before serving.

Adjust the heat by removing jalapeño seeds (milder) or adding hot sauce (spicier). Or, substitute regular Organic Valley® American Cheese (milder).
