In a small bowl, whisk together eggs and milk until well combined. Season with salt and pepper.

Tips

  • To ensure the omelet is fluffy, whisk the eggs well until the yolks and whites are fully combined. Adding a little milk (or even water!) makes the omelet softer and fluffier.

In a non-stick skillet over medium heat, melt 1 ½ teaspoons ghee. Swirl to coat the entire pan, including the sides.
In the same skillet, add broccoli and red onion, sautéing for 1-2 minutes until slightly softened. Remove from pan and set aside.
Reduce heat to medium-low and melt the remaining 1 ½ teaspoons ghee. Pour the egg mixture into the pan and let cook undisturbed for 30 seconds.
With a silicone spatula, gently pull the edges of the eggs toward the center, tilting the pan to allow uncooked egg to flow to the edges.
When eggs are about 75% set but still slightly wet on top, on one half of the omelet add the sauteed broccoli and onion, Organic Valley® Flavor Favorites Spicy Cheddar shreds and jalapeño slices over one half of the omelet.

Tips

  • Add the filling to one half of the omelet only. This helps the omelet fold easily and gives a clean, neat presentation.

Using the spatula, carefully fold the other half of the omelet over the filling and cook for another 1-2 minutes.
Once the cheese is melted and the omelet is fully set, use your spatula to gently lift it from the pan and slide it onto a plate.
Serve immediately sprinkled with chives, as desired.

Tips

  • The key to a perfectly cooked omelet is low to medium heat. Cooking on high heat can cause the eggs to brown too quickly or become tough.

  • Use a good quality, non-stick skillet or an omelet pan to cook the eggs. An 8.5-inch pan is ideal for a three-egg omelet.

  • This omelet pairs wonderfully with avocado slices and a dollop of Organic Valley® Sour Cream to balance the heat.

  • Don’t overstuff! Keep your fillings to a small amount so that the eggs can stay tender and fold easily.

Frequently Asked Questions

Can I make this omelet ahead of time?

While omelets are best fresh, you can either prepare all the ingredients separately in advance and cook when ready or, make the omelet the night before, refrigerate, then reheat in the microwave for 20-30 before serving.

How can I tell when my omelet is done?

The perfect omelet should be lightly golden on the outside and moist but not runny on the inside. If you prefer a firmer omelet, cook for an additional 15-30 seconds before folding.

Can I substitute the vegetables with others?

Absolutely! Bell peppers, spinach, mushrooms, or tomatoes all work beautifully in this recipe. Just ensure they're cut small and pre-cooked if they have high water content.

How spicy is this omelet?

With both Organic Valley® Flavor Favorites Spicy Cheddar and fresh jalapeño, this omelet has a moderate kick.

How can I adjust the spice levels in this omelet?

Adjust the heat by removing jalapeño seeds (milder) or adding hot sauce (spicier). Or, substitute regular Organic Valley® American Cheese (milder).

What are some other flavor combinations that work well in an omelet?

We love broccoli and cheese using Organic Valley® American Cheese, or “Pizza Omelets” using Organic Valley® Flavor Favorites Italian Herb Mozzarella, ‘Nduja or pepperoni, spinach and fresh basil.
