Naturally sweet and topped with maple-soaked strawberries, it’s a fresh, vibrant brunch treat bursting with real lemon goodness and wholesome, quality ingredients.

Ingredients

Strawberry Maple Topping

  • 2 pounds fresh strawberries, cored and sliced  
  • ⅓ cup pure maple syrup  
  • Zest and juice of 1 lemon  

Sheet Pan French Toast

  • Organic Valley® Pasture Raised Large Eggs  
  • 1 teaspoon vanilla extract  
  • ⅛ teaspoon salt  
  • Zest and juice of 1 lemon  
  • 12 slices thick-cut brioche bread  
  • Powdered sugar (optional for garnish) 

Directions

Strawberry Maple Topping

  1. In a medium mixing bowl, stir together the strawberries, maple syrup, and zest and juice of 1 lemon. Allow to sit for 30 minutes while you prepare the French toast.

Sheet Pan French Toast

- Select a step number to highlight that step.
  1. Preheat oven to 400 F and grease 1 half sheet or 2 quarter sheet baking sheets with cooking spray. Set aside.
  2. In a large mixing bowl, whisk together the Organic Valley® Pasture Raised Large Eggs, Organic Valley® Original Oat Beverage, vanilla, salt, and the juice and zest of 1 lemon.
  3. One at a time, dip the bread slices into the mixture, soaking each side for a few seconds, then allowing the excess to drip off before transferring into a single layer on the baking sheet. Continue until all 12 pieces of bread have been dipped.

  4. Bake in the oven for 12–14 minutes, or until the bottom of the French toast is golden brown.
  5. Serve the French toast warm with the macerated strawberries and a sprinkle of powdered sugar, if desired.

Frequently Asked Questions

Frozen strawberries will work for this recipe, but they should be thawed overnight before making the French toast.

Grassmilk® and/or Whole Milk will work in place of the Oat Beverage. 

The best way to reheat sheet pan French toast to keep the edges crispy is to reheat in a skillet or in the air fryer.

Brioche, challah, or anything thickly sliced; Sturdy bread works for sheet pan French toast.

A half sheet pan is best for this recipe, but you can also use 2 quarter sheet pans instead.

A deeper dish will likely not work for this recipe, and the French toast will take longer to bake, won’t brown, and may even become soggy!
